Author Biography
Eric M. Knight and Stacy M. Coplin run Local Leaf LLC, where they sustainably wild-harvest, process, and sell Yaupon Matcha. Eric is an environmental engineer and teaches edible/medicinal plant classes at Earth Native Wilderness School, UT's Ladybird Johnson Wildflower Center, and through his own business, as well as custom edible plant classes.
